Steak with Blue Cheese Stuffed Potatoes

Ingredients
  • 2 Steaks (or one large, 4-6 oz per person)
  • 2 Baking Potatoes
  • Marinade
  • 1 tablespoon Olive Oil
  • 1/2 tablespoon Acid (Vinegar, citrus juice, cider, etc)
  • 1 tablespoon Steak Seasoning (Keg, montreal Steak, etc)
  • 1/2 teaspoon Garlic Powder
  • Blue Cheese Sauce
  • 1 Chopped green onion (or chives)
  • 60 grams Blue Cheese Crumbles
  • 1/4 cup Sour Cream (or Greek Yogurt)

  • 150 - 200 grams Vegetable (Frozen broccoli, asparagus, brussel sproutes, etc)

    Prep Day
  1. Marinade

    Combine marinade ingredients. This can be done directly in bag or container being used to marinate steak. 

  2. Marinate Steak

    Store Steak with marinade in either a food storage bag or large container and keep refrigerated.

  3. Blue Cheese Sauce

    Finely chop green onions or chives and crumble blue cheese. Combine with sour cream in a fridge safe sealable container and keep refrigerated. 

  4. Cook Day
  5. Pre-cook Potatoes

    Clean and poke holes in baking potatoes then microwave using potato setting. Remove steak from fridge and allow to come to room temperature. 

  6. Pre-heat Grill

    Pre-heat grill to 400 degrees. Oil now cooked (or mostly cooked) potatoes and place on top rack if using grill. Alternatively if broiling in oven prepare sheet pan by greasing thoroughly.

  7. Vegetables

    Microwave frozen vegetables according to package directions. Alternatively if using fresh vegetables prepare grill basket and cook for 15-25 minutes prior to cooking steak. 

  8. Steak

    Cook 2-4 minutes per side according to preference and thickness.

  9. Serve
