Greek Pork

Ingredients
  • 1/2 pound Pork (Tenderloin, Pork Chop, or Rib Loin)
  • 1 Sweet Bell Pepper
  • 1 Zucchini
  • Marinade
  • 2 tablespoons Olive Oil
  • 1 tablespoon Vingegar/Acid (lemon Juice, balsamic vinegar, red wine vinegar)
  • 1 teaspoon Garlic Powder (or 2-3 fresh cloves)
  • 1 tablespoon Dried or Fresh Herbs (oregano, rosemary, dill, thyme, parsley)
  • Salt and Pepper to taste

  • 150 grams Rice (2 servings of brown, jasmine, basmati, cauliflower rice)
Instructions
    Prep Day
  1. Chop

    Chop vegetables into chunks. If planning sheet pan dinner cut pork into 1.5 inch cubes. 

  2. Prepare Marinade

    Combine marinade ingredients together (blender or by hand) 

  3. Assemble

    Dump chopped vegetables and pork chunks/chops into storage bag/container. Add most of the marinade to bag reserving small amount to use later for seasoning rice.

  4. Cook Day
  5. Rice

    Prepare according to package directions

  6. Oven

    Dump onto sheet pan and broil 5-7 minutes until pork is done. 

  7. Grill

    Preheat grill 400

    Use grill basket for vegetables and cook pork chops on grill. Cook veggies 15-30 minutes, and pork 10-15 minutes.

  8. Serve

    Add reserved marinade to cooked rice and fluff.  Then serve with pork and vegetables, top with feta if desired.
